I Have Moved!


Well, I am happy to say that the time has finally come! I've been in the process of moving to a new blog since early September, and have faced many hurdles. What can you say? Life is all about learning and improving, right? God blessed me to find some great people to assist me with this transition and it is now complete. I received a lot of good feedback on the vegan macaroni and cheese recipe, so I decided to do a video on it. Now you can see with your own eyes how EASYYY it is! I've tried several vegan mac and cheese recipes, but I really enjoy this one because it is both tasty and inexpensive. That makes for a winning combo in my book! :)

Recipe: Collard Greens


Considering the fact that both of my parents are from Trinidad, we never really ate collard greens at home. Our green dish of choice was typically callaloo. It's a tasty, creamy dish of special greens from Trinidad along with coconut milk. It's usually flavored with a meat like salt beef (beef cured with salt). My mom told me stories of how she would "chuk de pot" looking for a nice piece of salt beef as a little girl. So of course, that was my favorite thing to do too! :)

Recipe: Vegan Coconut Cornbread


The holidays are here and boy am I excited! One food that I enjoy around the holidays is hot, freshly baked,  cornbread. A few years ago, when I was following a vegan diet I developed a vegan cornbread recipe. One day I tried using coconut milk in the recipe and loved it! I just had to share it with you. :)

Menu Plan Monday


I spent this weekend trying to master a dhalpuri roti recipe. Once again, I was reminded of the valuable lesson of patience. This is about my fifth time trying to make dhalpuri roti on my own. The first time was a horrible failure, but I have improved a lot since my first try this summer. 

I have to admit that I was being impatient yesterday. As a result, I didn't allow the stuffed dough balls to rest for long enough. The dhalpuri looked good, but the texture wasn't quite right. Lesson: if you're new to cooking (and even old) remember that you *will* get it, you just have to keep on trying. Let the failures roll of your back! :)

One thing that was a success for me was Menu Plan Monday! I loved it. It helps me stay organized and answers the dreaded question of "what's for lunch/dinner?" So here's what's up for this week:

Monday/Tuesday: Bus-up shut roti with curry potatoe and channa, and squash talkari
Wednesday/Thursday: Brown rice with cabbage, collard green, and tofu stir fry
Friday: Sandwiches and french fries
Saturday: Haystacks (a layered dish of tortilla chips, rice, Mexican-style beans, shredded lettuce, tomatoes, olives, and guacamole)
